While there are many ways to enjoy salmon, one of the most popular is smoked salmon. This brunch staple is delicious served on sandwiches, with bagels and cream cheese, or chopped up in salads. Smoking the salmon also helps preserve it, which is great when you can find a good deal on the fish.

What You Will Need

  • 1 cup of kosher salt
  • 1/2 cup of white granulated sugar
  • 1/2 cup of dark brown sugar
  • 1 tablespoon of crushed black peppercorns
  • 2 large salmon filets with in pin bones removed
  • Small mixing bowl
  • Extra wide aluminum foil
  • Plastic wrap
  • 2 planks or sheet pans
  • Heavy phone book or brick
  • Hardwood chips or sawdust
  • Smoker
  • Paper towels
  • Meat thermometer
  • Plastic or wooden spoon

What to Do

  • In the small bowl, mix the salt, brown sugar and sugar and peppercorns
  • Spread the extra wide foil a little longer than the fish’s length
  • Top the foil with an equal layer of plastic wrap
  • Sprinkle a third of the rub onto the plastic
  • Lay one side of the skin of the fish down onto the rub
  • Sprinkle another third of the rub onto the flesh of the salmon
  • Place the second side of salmon down on top of the first side
  • Use the remaining rub to cover the skin of the top piece
  • Fold the plastic to cover, closing the edges of foil together and crimping tightly around the fish
  • Place the wrapped fish onto the plank or sheet pan and cover with the other plank or sheet pan
  • Place the phone book or brick on top of the top plank
  • Refrigerate for 12 hours
  • Remove from the refrigerator and flip the fish carefully before returning it to the refrigerator
  • Refrigerate for an additional 12 hours
  • Remove and unwrap the fish from the refrigerator and foil
  • Rinse off the cure using cold water
  • Pat the salmon dry with paper towels
  • Place salmon in a cool dry place that is not the refrigerator
  • Wait for one to three hours for the surface of the fish to be matte like and dry
  • Add the hardwood chips or sawdust to the smoker and get the temperature to 150 degrees
  • Smoke the fish until the thickest part of the fish registers at 140 degrees
  • Serve immediately or cool to room temperature and wrap tightly, refrigerating for up to three days
